Chocolate Fudge Frosting

My favorite type of frosting is the Swiss style buttercream but it is not everyone in my family's favorite so when the birthday cake request of vanilla cake with no lemon! and chocolate frosting I decided on a rich fudge style chocolate frosting. It was delicious and, more importantly, the birthday girl loved it.

Chocolate Fudge Frosting
10-12 oz bittersweet chocolate of your choice (I used 12 oz of Callebaut)
2 sticks butter
4-5 cups powdered sugar
A pinch of salt
2 teaspoons vanilla
3/4 cup half and half
1/4 coffee, instant espresso reconstituted, or if you do not like coffee increase half and half to 1 cup.

Directions
Melt chocolate and butter over double boiler, stirring until smooth. Set aside to cool slightly.

Sift powdered sugar and salt into mixing bowl.

Combine half and half, coffee and vanilla and then add to sugar mixture. Mix on low until combined.

Add melted chocolate and butter mixture to sugar mixture and beat until smooth.

Chill frosting for 20 minutes to thicken and then whip with your paddle attachment on your mixer to aerate if you prefer. Frost the cake.
