Quinoa Salad

I have been making a transition to more health conscious food like healthier grains, organic, absolutely no transfat (other than naturally occurring fats), foods closer to their true state. Not that I fed my family solely on processed and chemicalized foods but that stuff creeps in especially with the marketing to children. This is a lovely little salad to accompany a sandwich or the grilled chicken marinated with lemon juice, olive oil, summer savory, garlic and parsley that I served it with.

1 cup of cooked quinoa
1/2 cucumber cut in small dice
1/2 red bell pepper chopped fine
1 shallot chopped fine
handful of cherry tomatoes cut in quarters
handful of Kalamata olives chopped fine

Dress with 1/2 cup of red wine vinegar, 2 minced cloves of garlic, olive oil to taste, salt and pepper.

Lovely, simple, and healthy.

Truly healthy - as quinoa is one of those "wonder grains" or something. It sounds great!

yummy!yummy!yummy! I love quinoa salad. I'm going to have to make some. Doesn't it make your insides feel cleaner and taste good at the same time, or is that just me? :-)

It's not just you - quinoa is one of those fabulous things that is just all around good! Eating it, it takes the place of rice quite nicely, yet doesn't give you that ... well, that carb glut. :)

Did your family like the quinoa salad? Have you found other ways of using it? I just love it! I can't wait to make some other tasty quinoa salads when I visit next time. They also make quinoa flakes, which can be a nice protein compliment to your oats in the morning.
