Cinnamon Buns for the Daring Bakers

The September Daring Bakers' Challenge was a fun and easy recipe by Peter Reinhart from The Bread Baker´s Apprentice. I have been making cinnamon rolls for years but with my bread maker. I had tried to make yeast breads with my Kitchenaid mixer when I first got it in 90s but didn't have much luck and then got a bread maker a few years later and that was it. It was a real treat to make bread by "hand." The recipe was easy to follow and I never had a point where I worried if I was following the recipe correctly. One thing I learned (it so critical too) is to not roll your dough to thin which I had been doing in the past and having the chewy results mentioned in the recipe.

My rolls ended up being a tad dry. I don't know if I cooked them too long (they were not overly browned) or if the butter content was too low. I will definitely make this recipe again. Thank-you for the challenge Marce.

Great job - they look great! Dry? You'd never know by your pics. My second batch turned out drier than the first - not sure why.

I cover mine with foil towards the end of the baking time. Yours look great!

Beautiful buns Wendy. My grandmother's trick for preventing dry buns was to spread a thin layer of butter over the rolled dough before sprinkling on the cinnamon. It also helps the cinnamon stick.

Mine are about ten minutes away from the oven, so I'm also going to employ Tartelette's trick.

I guess you'll have to make another batch to see if its the recipe.... hee hee. I have another batch proofing right now, so I am trying to get others to do it too, so I'm not alone in my insanity.

Great job! Next time bake them a little less. They don't have to be completely browned. Some of my buns were fairly blonde but baked through and moist and fluffy inside. Good luck!

Wow your dough really rose a lot. You and I...we must have baked our buns too long in the oven. It seems there's a very fine line between moist and dry for these little baked goods. I'm with mary, I like seeing your punch down photo.

I found that they were a little dry the next day, but mostly because they had been sitting out. I like your step-by-step pictures!

Great photos. I think several of us had dry issues with the cinnamon rolls. Using this recipe I think all I'd change would be to spread melted butter before I spread it with brown cinnamon sugar. Brown sugar just has more moisture.
My favorite was the stickies!
